Cozy Winter Recipe: Healing Lentil & Vegetable Stew 🥣

Warming, grounding, and full of plant protein—perfect nourishment for winter strength and recovery.

Ingredients:

  • 1 cup red lentils (rinsed)

  • 1 onion, chopped

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cloves garlic

  • 1 tsp turmeric

  • 1 tsp cumin

  • ½ tsp cinnamon

  • 4 cups vegetable broth

  • Olive oil, salt & pepper

  • Optional: kale or spinach, lemon juice

Instructions:

  1. Sauté onion, garlic, carrots, and celery in olive oil until soft.

  2. Add spices and stir until fragrant.

  3. Add lentils and broth. Simmer 20–25 minutes until tender.

  4. Stir in greens at the end, season, and finish with a squeeze of lemon.
